It's tricky without knowing reverse engineering though and there have been difficulties ripping from those games. Since Gameloft was involved (as Ubisoft and Gameloft were related, both were run by the Guillemot family), they had their own custom format for the sprites. This was also a VERY EARLY Android game probably one of the first big name Android games so it is also an apk (that you can just rename to zip and extract it). Pre-iOS/Android mobile generally ran on Java (J2ME), so the entire game is stored in a JAR file. Some are literally just bmp/png/even jpg files laying about with the sprites set up, others are that but the layout is all over the place making it harder to sort out, some do their own thing and some do all of those.
